Abanico Shell Process

• 

  The raw material is transported in isothermal chambers in good cleaning and conservation conditions, for which the Quality Assurance Technician - TAC. Check the cleaning conditions of the vehicle.

• 

  This part of the process is considered a Critical Control Point (PCC).

• 

  The fan shells are shuck according to the type of presentation, using a flat spoon or other similar object to detach the stem from the leaflets, eliminating the viscera and finally obtaining the stem alone, the coral or the stem accompanied with the gonad (coral).

• 

  The supervising personnel should check that the shuckersperform the operation in the best possible way, completely extracting the stem and preventing it from breaking or leaving in the middle. In the case of the stem with coral, it should be avoided that the coral is detached or breaks the league.

• 

  The washing is carried out inside the Primary Process Room, and one or two people are in charge of this stage, for which there are showers, spray keys, hoses and a table suitable for carrying out the operation. The washing of the product should be carried out in the shortest possible time to avoid over-hydration of the product and the temperature of the water should be less than 4.4 ° C.

• 

  The weighing stage is carried out in order to control the final composition of the batch that will be paid to the supplier, which consists of placing 02 kilos of product inside each basket (always respecting the code and the batch) which is the Average amount of product that will be placed inside the plastic bags for final storage.

• 

  This operation is carried out in the packing room by trained and experienced personnel, under the direction of the production staff, in which the previously washed and drained.

• 

  The packed product will be stored in appropriate environments (chambers of storage of finished product), with temperatures below -18 ° C, distributing the stretchers with the boxes in an orderly manner and separated from each other according to the batch number and / or date of production. In addition this should allow good circulation of cold air in a way that guarantees the quality of the product for several months.
